Fish nuggets

Here is a recipe for homemade haddock fish nuggets, where you use a mixer/hand blender to create a smooth stuffing, inspired by methods for fish cakes. Serve with chili mayo and wedges, fries or mashed potato

Ingredients

  • 600-800g cold haddock (skin and boneless)

  • 1 ts salt

  • 1/2 ts pepper

  • 2 eggs

  • 1 dl Maizena or potato flour

  • 2 ss The Essence of the North (fish powder)

  • ca. 1 dl milk

  • 3 dl Panko (Japanese breadcrumbs)

Method

  • Mix fish, egg, flour, milk and spices in a food processor until smooth. 

  • Shape the the stuffing into cakes or sticks.

  • Turn the cakes in panko so that they are completely covered.

  • Place them in the air fryer, spray with a little oil and fry at approximately. 180-200°C for 10-12 minutes
